This is a perfect soup that will have you and the family feeling cosy in no time, its easy and delicious...
Makes 8 servings
Ingredients: 1 onion (chopped)
2 carrots (chopped)
2 sticks of celery
1 tbs of fennel seeds
2 cloves of garlic (whole)
A grate of nutmeg
Olive Oil
2.5kg San Marzano tomatoes
Pesto (optional)
Bread (freshly cooked baguettes are great!)
Method:
Begin by making a sofrito, a mix of carrot, onions, celery and garlic, sweat until the onions are translucent.
Next add the fennel seeds and tinned tomatoes.
Cover and cook for 1 hour.
Once cooked season to taste and blit.
Grate the nutmeg over the top and add some pesto.
Serve with bread (preferably a freshly cooked baguette)
